What I Ate Day #3

Aaaaahhhhh today was very interesting. I finally started to expand my knowledge in cooking. I have tried my very first vinaigrette, very first pancakes of the upcoming fall season and my very first fancy lunch or so I thought which I will talk about later in this post.

Breakfast: The most delicious apple and cinnamon pancakes. Beware though they should come with a warming saying extra fluffy and thick, eat at your own risk. They are so filling I was only able to handle one without syrup or anything else. And the recipe is by The Little Epicurean which she named Cinnamon Apple Pancakes. This lady is not messing around with this recipe it does not disappoint specially if you are a thick pancake lover. And also, not a bad way to warm up for when fall starts.

Mary Berry's Mushroom en Croute

Lunch: Mushroom en croute. Ok I am going to start off by saying that this was my least favorite recipe that I ate today. The flavor is there but maybe next time it will come out way better after cooking more recipes using these ingredients. And I will also start off by saying that it was my fault since I have to confess that I did not exactly follow the recipe 100%. Even though I said I wanted to taste new flavors I was too scared to invest my money on two cheeses I have never tried before. I was too scared to try ricotta and Gruyere which I know many people love and could probably not want to live without. I replaced those two cheeses with mozzarella and parmesan. Which probably was not the best decision. And I know that I am greatly missing out on trying these cheeses mentioned earlier so I will have to muster up the courage and try them because they are used a lot in many recipes. It was also a lack of research on my part for not reading the instructions thoroughly and for crying out loud not even looking at the picture. The final product did not come close to looking like this. It was flat, lacking color and it looked like a pop tart since we ended up making it like a pop tart and not folding it like how it looks in the picture above. All in all, I think I will try to make this again since I really did like the flavor of the mushroom and cheese mixture. But this time with the right cheeses of course. Since it was also my first puff pastry recipe that I have ever tried, I will try to come back to this after practicing a little more with this ingredient. Grilled Chicken Orzo Salad with Avocado by How Sweet Eats

Dinner: Grilled chicken orzo salad with avocado by How Sweet Eats. Ok first of all wow. This was my favorite recipe of the day. It just blew my mind. As my sister said it better, I did not know what to expect but you guys everything goes so well together. It is packed with flavor; it is refreshing, and it is so darn good. I am like my sister likes to call her children a chicken nugget. Once again, I was afraid to try the vinaigrette since it was my very first experience trying one. But I tried it, and I liked it. I also love how you can turn the volume and the heat up on this recipe depending on your liking. First let's start with the chicken. You guys I could not believe this chicken recipe only had four ingredients and it was so bomb. Even though we kind of cheated we added twice the ingredients of the chicken to half of the chicken needed in this recipe. Which in my opinion yielded a tastier punch to my taste buds. I did not change anything to the vinaigrette except for the chili pepper flakes which only added a little more spice and heat. I love that one little box of orzo turned to a lot of orzo and that you can pretty much use little, a lot or no chicken and make this orzo salad vegan. Love, love, love. Until next time.
